Hautes Cotes de Beaune by Seichii Saito is the fruit of a vineyard located near the pretty village of Nantoux, hidden on the higher slopes west of Pommard. The vineyard is entirely managed in biodynamics. The wine is vinified in whole bunches, with its own yeasts and very few pumping over. It is subsequently aged in wooden barrels for 11 months. No clarification or filtration is done before bottling, which takes place with the minimum of SO2 possible.

This is one of the portraits of Seichii's hand, a wine of such frankness that it is crisp and tasty. Firm fruit, cleanliness, directness--a producer who cuts to the chase.
