A rarity from the Jura. Savagnin in purity this vin jaune first experienced a stop in piece bourguignonne, with pumping over the first year to keep the fruit alive, then left in the cellar at a low temperature for more than 6 years so as not to speed up the process. The famous voile (the cap made of a mushroom) formed on the surface of the barrel and fed on the wine during this period. 1/3 of the total volume in this period evaporates, the wine is transformed and acquires its unique characteristics. The refinement extends up to 10 years!
